Stuffed tomatoes

It's the season of tomatoes, why not take advantage of it for a tasty and alternative side dish? THE stuffed tomatoes baked in the oven are a simple and delicious recipe, to be eaten just warm or as a nice idea to enjoy during a picnic with your friends. Baked in the oven, they also remain light and therefore are ideal for the summer season.

Baked stuffed tomatoes. Ingredients for four people

  • 8 ripe coppery tomatoes
  • 50 gr. Grated Parmesan cheese
  • 1 clove of garlic, peeled and coarsely chopped
  • 2 teaspoons of extra virgin olive oil
  • 2 teaspoons of breadcrumbs
  • Salt, pepper and oregano to taste
  • Parsley
  • basil

Baked stuffed tomatoes. The preparation
Cut the tops of the tomatoes and empty them with the help of a knife and a spoon. The pulp obtained should not be thrown away but put aside in the container. Blend together the parsley, basil, garlic and pepper for about twenty seconds, then add the extra virgin olive oil while continuing to blend until a smooth and soft cream is obtained. Pour this cream into the container together with the tomato pulp, incorporating the breadcrumbs with your hands or with a wooden spoon.

Add the grated cheese and a little salt with the help of a spoon, fill the tomatoes with this compound. Place the freshly stuffed tomatoes on a baking sheet, previously sprinkled with oil, and bake at 200 degrees for 20 minutes. Important: cover the tomatoes with aluminum foil at the beginning, and uncover them only in the last 10 minutes.

Once cooked, place the hat on each and sprinkle with a little oregano.
